Spinach & Artichoke Dip
Serves 12
- 1 10-oz. box frozen spinach, thawed
- 1 12- to 14-oz. jar/can artichoke hearts, drained & roughly chopped
- 1/2 cup cream cheese, whipped
- 3/4 cup sour cream

- 1 cup grated cheddar cheese
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Pita chips, tortilla chips, crackers, or sliced french bread (to dip)

Heat oven to 400 degrees F. Squeeze the spinach between paper towels to remove excess moisture. In a medium bowl, combine spinach, artichokes, cream cheese, sour cream, and Cheddar. Season with the salt and pepper. Scrape into a small oven safe baking dish. Bake until lightly golden and heated through, about 15 minutes. Serve warm. This is a very quick recipe, only takes about 5-10 minutes to put it together, plus baking time.
